DIABETIC BANANA MUFFINS

DIABETIC BANANA MUFFINS

1 egg

3 tbsps. vegetable oil

¼ cup skim milk

1 1/3 cups mashed ripe bananas

1 cup whole wheat flour

2 tsps. baking powder

1/4 tsp. baking soda

1/8 tsp. salt

 

Preheat oven to 400°. Spray or line 12 muffin cups. Beat the first 3 ingredients

together. Stir in bananas. Combine dry ingredients and add to egg mixture until

just moistened. (Do not use an electric beater.) Fill cups one half to two

thirds full. Bake 23 minutes. Cool 15 minutes before removing from pan.

This is one of my favorite muffin recipies too! I kick it up a notch

by adding:

 

a splash of vanilla (seems to bring out the banana flavor)

 

and:

 

a handful of chopped walnuts (optional)

 

MMMmmmmmmm!
