zucchini pie review

I think the sharp cheddar might be a bit too strong! Could cause the aftertaste.

I'm happy to hear how much you and the girls enjoyed the recipe. You can add a

sliced veg. Italian sausage to it.

zucchini pie review

 

 

So, Donna, you know I don't cook much these days. I collect recipes and

cookbooks but I don't use them much. ;-)

 

Anyway, I decided to make your zucchini pie last night. It's similar to

a spinach frittata that I used to make that _one_ of my kids loved, but

the other didn't. I had it in the oven last night (it was after dinner,

but I figured it would be good for breakfast or lunch today) and the

power went out. I don't know how close it was to being done, but I left

it in the oven with the door closed. When the power came back on at

12:30am, I checked it and it had cooked to golden brown perfection!

 

Anyway both kids tried it (_very_ tentatively) this morning. The

verdict? A success! Both girls said it has a strange aftertaste -

can't imagine why, but they really liked it and both had it for

breakfast _and_ asked for it in their lunch. I'm glad that it has so

many veggies and I used a scant cup of sharp cheddar cheese, rather than

a full cup. (I didn't have a mild.) Gruyere would also be fabulous in

this which is what my frittata uses. Next time I'll add some greens,

like spinach. I can see how you can really play with this.

 

Oh, the only changes I made (besides using sharp cheddar instead of

mild) is that I grated the small onion and I used whole wheat flour

instead of white. Invisible onion goes over better in this house. :-)

 

Today I'm going to make corn chowder, which one of my kids has been

requesting for awhile.
