I joined the group looking for new inspirations - particularly recipes that might be low in sugar, fat and salt. Here is a recipe for something we like to have for breakfast - a Tough Oatmeal Pie with fruit or pumpkin filling. Tough Oatmeal Pie Crust For a crust on the bottom and sides of dish, only, use 3/4 C wholemeal flour 3/4 C non-instant rolled oats Mix with enough water to make a very thick paste. Press onto the bottom and sides of an oiled loaf pan. (You can roll it out if you want, but this makes it REALLY tough!) Add filling, bake about 45 minutes in moderate oven. To make enough mix for a top crust, use 1 cup each of oatmeal and flour. Roll out the top if you wish, or just shape thin bits with your fingers and arrange over the top of the filling. Use any fruit filling you wish, such as sweet apples or peaches or apricots - etc. (I only use raw, fresh fruit - not canned. If you have some berries handy, throw them in too.) Mix 2 tablespoons sugar with 1 tsp cinnamon, a dash of nutmeg, or allspice or cardamom, maybe a little grated lemon peel, and sprinkle over the sliced fruit. Put a top crust on, or just sprinkle oatmeal over the top. Optional: 2 Tbl chopped nuts sprinkled on top. Another good filling is pumpkin: 1 C cooked pumpkin 2 eggs 1 C water + 1/4 C powdered skim milk Spices to taste: cinnamon, nutmeg, cloves, ginger, cardamom, vanilla 1/4 C mixed dried fruit Blend the first 4 ingredients, pour into tough oatmeal crust, sprinkle the dried fruit on and stir in gently.
