adapting recipes to tomato free?

I hope it is alright to ask about this. Carolyn mentioned not eating tomatoes

which I also can't tolerate. I'm wondering if anyone has experience substituting

for the smaller amounts of tomatoes that frequently are called for in recipes.

They are so ubiquitous! I can simply give up on tomato sauces but surely some

things are easy to just substitute?

So far, I've been focusing on finding substitutes that provides the " zing "

that tomatoes give a dish.

 

* Soups: Add some mustard greens, which provide a slightly bitter flavor.

* GF pasta or rice dishes: A little apple cider vinegar to give it some

punch.

* A little cayenne or cinnamon can give dishes some zing.

* Lemon or other citrus is good, too.

 

As for spaghetti sauce, I don't even try to replicate it. Instead, I just

make pesto sauce, or maybe go with oil and spices.

 

I'm looking forward to reading other responses. Good question.
