Whoohooo! 1st posted recipe! Waffles

This is posted on my blog...my first posted recipe. Well, its not mine but

rather a recipe from one of Carol Fenster's books and made to our liking. Hope

you enjoy! And I'm a beginner so, hopefully I don't embarrass myself! lol!

 

 

These waffles are our favorite and among being gfcfsf are also rice & egg free

too! Hope you enjoy as much as we do...

 

Dry

3/4 cup Buckwheat

1/2 cup sorghum

1/4 cup teff

1/2 cup potato starch

1/4 cup tapioca flour

1 tea b soda

1 tea kosher salt

1/2 tea x gum

2 tbl sugar

 

Wet

2 tbl oil of your choice, I've used canola & sunflower

CF Buttermilk: 1 tbl gf cider vinegar and enough " milk " of your choice to equal

1 1/4 cups.

2 tea vanilla extract

 

Variations

Sometimes,

depending on my mood and stock I add 1 very ripe mashed banana (tastes

much better with banana). You could also try adding in some Enjoy Life

chocolate chips, for the teff and/or buckwheat already give the waffles a kinda

chocolaty flavor.

 

1 Heat your waffle iron.

2 mix all dry ingredients thoroughly

3 Whisk in all wet ingredients until just blended

4 Pour batter into waffle maker. The amount to put into the maker depends on

how thick you like your waffles.

5 Close and repeat until the steam stops or according to the directions on your

waffle maker

6 Repeat steps 4 & 5 until all the batter is used up.

 

*The amount of waffles made is dependent on your maker and you. We

usually are able to make about 8 waffles. Also, sometimes I add a

teaspoon of water at a time until I get the batter the consistency I prefer.

 

*If you don't eat all the waffles at one sitting you can freeze them and either

reheat in microwave or toaster. I prefer the microwave. I do this one waffle

at a time and wrap with a wet paper towel.

Looks great!

 

I just know that sometime I'll need gluten-free, vegan, corn-free,

soy-free, rice-free waffles. Either I'll have a friend looking for

them, or be trying to coordinate people with multiple allergies, or be

back on a rotation diet. So I have filed it away . . .
