Mm, your lunch sounds yummy! My brother should have been a vegan; he despised

cheese ever since he was little.

 

Samhain is a pagan holiday; the New Year. It's the time of year to honor

those who have passed away during the year and welcome new babies that have been

born. It's also the time of the year to reflect on what you've harvested in

your life over the past year and what you hope to bring into your life during

the next one.

 

There was no ill intent behind my statement; if you don't celebrate or take

part in fall holiday celebrations, just disregard my well wishes! :-)

I was not offended, I just wondered what that was, I had not heard it

We celebrate the Reformation - and tomorrow is Reformation day.

That sounds good Cindi. I’m out of food right now so I’m going to check out the

recipes to see what look good to me today. I cant remember to soak my beans at

night. Can’t I just put then to soak now? I shouldn’t matter what 8 hours they

soak right?

I hadn't either Zen. It gave it a nice color and added some different texture

to it. The recipe called for just a cup so it wasn't overloaded with squash.

I can post the recipe tonight if you'd like.

Nope, shouldn't matter I would think, day or night! For this chili we cheated

and used canned beans. We tend not to think ahead very well either!

Won't have lunch today, probably brunch in a few minutes. Probably Oatmeal

Hi Zen ~

Yes, it calls for butternut squash or pumpkin. I totally spaced it last night

and forgot to post the recipe. I'll send it tonight for sure. The worst part

is that it's already in my computer at home, I just need to cut & paste it to

the group!

Yep, we do. I would imagine those that don't eat eggs & dairy would be close to

being vegan.

That's what I currently do, Zen. Someday I will be vegan...not yet though.

Don’t worry about it Cindi. I may not be here long. I was unaware that this

group was a radical as it is. I just don’t care to go down that road. I believe

why bather respecting animals when we cant even respect each other. I believe

humans are of a higher order than animals even if some of us don’t act like it.

I'm pretty boring today. Lunch will be cottage cheese, grapes, and 3

graham crackers. I like what you're having much better!

 

Dinner will be better. We made extra rice for dinner last night and

using the leftover rice as part of stuffed peppers tonight.

I love stuffed peppers and eggsalad! Bring on the recipes PLEASE!!!!! lol :-)

Stuffed peppers are a good way to use up some vegetables in the

house. I use just like round, or whatever the equivalent is for soy

based imitation ground hamburger, brown rice, onions, and salsa.

Season with garlic, oregano, whatever spices I happen to grab.

Sometimes top it with parmesan cheese, but not right now while we're

more intent on weight loss. My husband was making them last night

and he's a bit more adventurous than me. He was chopping up fresh

mushrooms and a tomato for stuffing. He'll also put in a few chopped

nuts like slivered almonds, but I don't really like it when he adds

the nuts. Not saying I don't like nuts, just not as pepper stuffing!

I was wondering what I was going to do with all these bell peppers I just picked

from my garden. Thank Cheryl. I also have a lot of tomatoes. Do you know how to

make salsa? Zen

Hi Zen, I'm not quite that talented or ambitious! I buy black bean

and corn salsa at the grocery store. I checked the fat free website

and they have a bunch listed so you can browse the ones there. Cheryl
