Worcestershire Sauce Substitute?

Does anyone know of a substitute for worcestershire sauce?  I want to make some

gluten-free chex mix.  The recipe I found is not vegan and Lea and Perrins is

not vegan.  The vegan stuff I've found has wheat syrup.

Help?

Thanks so much!

There are a couple of simple recipes in the Files. I haven't tried

either of them as I have been able to purchase GF vegan Worcestershire

sauce (in Australia).

Kim :)

Worcestershire Sauce

10 cups vinegar

60 g (2 oz) garlic, peeled and chopped

60 g (2 oz) whole cloves

30 g (1 oz) knob of ginger, sliced

4 onions sliced

1/2 tsp cayenne

2 1/2 cups treacle (molasses)

1/4 cup salt

1. Boil all together for 1/2 an hour then strain.

2. Bottle when cold.

Easy Vegan Worcestershire

Source: Recipezaar, from randomgirl.com.

1/2 cup cider vinegar

2 tablespoons (30 ml) Braggs liquid aminos (-OR- GF soy sauce)

2 teaspoons water

1/4 teaspoon mustard powder

1/4 teaspoon onion powder

1/4 teaspoon ground ginger

1/4 teaspoon garlic powder

1/8 teaspoon pepper

1/8 teaspoon cinnamon

1 teaspoon sugar (optional)

1. Combine all ingredients in a pan and bring to a boil over

medium-high heat.

2. Reduce heat and simmer for a minute or so, stirring often.

3. Let cool and store in refrigerator in a container with a

tight-fitting lid.

Yeah, I generally do an uncomplicated mix of aged balsamic vinegar, molasses

and salt in recipes that call for Worcestershire. I would use Bragg's in

place of the salt if I could eat soy.

Lea and Perrins is gluten-free and widely available at any market, at least in

California. Here is their statement:

Q. Is Lea & Perrins® Worcestershire Sauce gluten free?

A.Yes, Lea & Perrins® Worcestershire Sauce is gluten free.

I use Angostura brand Worchestershire Sauce. It's vegan and I believe

gluten-free as well. Here are the ingredients:

vinegar, water, molasses, corn syrup, sugar, natural and artificial flavor,

salt, and garlic.

I guess the only question might be the 'natural' flavors (from the vegan

perspective). This brand is available at Safeway.

Lea and Perrins has malt vinegar in Canada. And

the OP said Lea and Perrins is not *vegan*. She's

looking for one that's both gf and vegan.

But not vegetarian:

Q. Do you make a vegetarian version of Worcestershire Sauce?

A. No. Lea & Perrins® Worcestershire Sauce is made to the original

recipe created in 1837 and contains anchovies - a type of fish. We

believe that altering the recipe to exclude a key ingredient such as

anchovies would mean that Lea & Perrins® would no longer be the

'original and genuine' Worcestershire Sauce, as claimed on the bottle.

Yeah, I forgot about the anchovies. So many things to remember to check for

when vegan and gluten-free...

Thanks everyone for speaking up.  Thanks especially to Kim for the recipes.  I

made the second one and used it in gf chex mix.  I was told the mix tasted very

much like worcestershire sauce, so that 1/2 cup of vinegar recipe is a keeper.

Thanks again.
