I live in sunny Bolton; I've been here 12 years but am originally

from South West London.

Welcome to the group! What's it like being a vegan in the North West?

There's an idea :-). Of course, you can't technically pass through the

initiation stages of Freemasonry as a Vegan, as you have to wear calf-skin

in the Fellow Craft degree.

It is good to have you here, Genie. You sound very busy. Thanks for that

salad recipe; it sounds divine.

I am always touched when I read about people who take the time and effort to

help out with rehabilitating abused animals. Kudos to you! Bella is blessed

to have you in her life, and so are you to have her.

Welcome to the group, ruby. I hope more folks will soon join even if they are

just interested in some meat-free recipes and enjoy cooking ideas.

The truth is everything tastes so good, it is never dull or bland, and you don't

miss the meat or animal fat in the flavor at all. :-)

No, cumin itself is not hot. Not at all.

Well -- I'll backstep: it doesn't taste hot at all to ME.

Sometimes different people taste things differently.

Interesting, I'll look for it. I've never yet found a

soymilk I could stand. I do eat tofu and tempeh, though.

No, cumin isn't hot at all...It's not a pepper, it's a

seed. It has a very intense flavor. The spiciest

addition to this is cayenne pepper, which is very hot.

So, omit that if you'd like. This chili is a little

spicey but...Its chili:) This isn't yankee chili but

its not three alarm either...Its middle of the road.

Curry is spicier than all the spices used in this save

the cayenne. This chili will not burn your mouth or

tummy but it will cause the sinuses to open and drain

a little...Which is a good thing.

Welcome to the group, Debs. I am glad you decided to join us. Do you miss

England and was it difficult adjusting to living in TN?

Hey -

Mostly no - I don't miss England (certainly not the rotten weather)

just every now and then I get homesick. I miss the pubs!

I guess it was quite hard to adjust - it's so long ago I've

forgotten! Seriously, I've always been a bit of a nomad - home is

where I am. You just make the best of it.

TN is *green* like home, and we do have all 4 seasons here so that's

nice....

Anyways, this black sheep seems to have found a home in Murfreesboro

TN and I guess this is where I'm staying for now. Don't think I've

ever been in the same place this long before!

It's nice to get a chance to meet you all. I would have thought there

would be more vegetarians out here than they are. My family all

thought I was a freak (even more so) because I became veggie. That

was until my mom was told to cut out red meat due to a cholestorol

problem - that changed their views a bit!

Sometimes I feel like we (vegetarians) are treated like second class

citizens ... why is that you think?

Sorry in advance for spelling guys! My spell check is hung up and only drives

and drives!!

Debs,

I am on the other end of this long state from you, but ironically my brother and

his family live in Murfreesboro. (Big horse country isn't it! lOL)

OUr best friends live in Cambridge England and we dearly miss them. I can't say

they are really happy over there (SOmething about the cost of eating out and

owning a car??) but they love their jobs and friends. We send them " care

packages " of requested items and often send them Smoky Mountain calanders as he

dearly misses our seasons, " green " and fall colors!

Us southerners were raised on bacon, ham and fried chicken so its hard to break

habit with old timers set in their ways. But I also think it is the meat eating

public in general, not just down south. Its almost as if they ( " They " as in

meat eaters.) are scared of why you are doing anything different that they are.

Who knows...perhaps they think we think we are doing something better or

healthier, or they feel intimadated because they are not doing it. People often

have a hard time thinking outside the box and if you are the least bit different

for them, its hard for most to except. Sometimes its really strange and " they "

can be really defensive about it, and I am even talking about my closest friends

and family! LOL I am buddhist so down here in bible belt country...you can

just imagine!! I am sure I am in many prayers and although most don't have a

clue as to what it really is about, it scares them to death!

Hope you enjoy the states!

With kindness,

Beth

This is really true and I have NEVER understood it. I read

rec.food.cooking (a newsgroup) sometimes and it's amazing

how even the mention of being vegetarian (in a polite

manner) by someone will create havoc -- often, from the

reaction, you'd think someone had proposed barbecuing their

first-born child for Thanksgiving dinner!

I've noticed this in other venues and places too. Very

strange, very strange indeed. I know it's something

different, something 'outside the box', but I'll be darned

why so many people think it's THREATENING.

I don't care what ANYONE ELSE eats, just what we eat in our

own home. I don't see any reason for anyone to care what

other people eat (except cattle ranchers, pig farmers,

chicken farmers and the like, I suppose).

Pat (not even a vegetarian, just a fellow traveler)

Eric,

Welcome to the group. Although I'm not in the area I'll answer what I can. At

least it won't take long ;-)

>Does anyone know about the Apple juice that their selling in some of

>the stores now that's supposedy pastuerized in a way that doesn't

>destroy the nutrients?

I think you're talking about " flash " pasteurizing. They say it doesn't destroy

the nutrients, but nothing about enzymes. My guess is that it destroys the

enzymes, at least partially. I've found a couple of store drinks recently that

would be perfect if it weren't for the fact that they're pasteurized :-(

>And, also does anyone know anything about the treatment done to young

>coconuts before they're shipped here from Thailand? I read some info

Treatment of young coconuts seems to vary quite a bit. I've had some that made

me sick from the herbicides they put on the outside (yes I think it got inside).

The best bet is to get them from greencoconuts.com - although it's expensive.

They are completely organic, grown in Florida. There may be a source closer to

you, but I don't know of one. I've had some from Seattle area stores (where I

used to live) and from the co-op in Pittsburgh (near where I live now) that I

felt OK after. Unfortunately there's no better way right now to tell how good

they are except eating and seeing how you feel afterwards (around here anyway).

Hope this helps.

Nick
