The spiciest addition to this is cayenne pepper, which is very hot. So, omit that if you'd like. This chili is a little spicey but...Its chili:) This isn't yankee chili but its not three alarm either...Its middle of the road. Curry is spicier than all the spices used in this save the cayenne. I guess it was quite hard to adjust - it's so long ago I've forgotten! Seriously, I've always been a bit of a nomad - home is where I am. You just make the best of it. TN is *green* like home, and we do have all 4 seasons here so that's nice.... Anyways, this black sheep seems to have found a home in Murfreesboro TN and I guess this is where I'm staying for now. Don't think I've ever been in the same place this long before! It's nice to get a chance to meet you all. I would have thought there would be more vegetarians out here than they are. My family all thought I was a freak (even more so) because I became veggie. That was until my mom was told to cut out red meat due to a cholestorol problem - that changed their views a bit! Debs, I am on the other end of this long state from you, but ironically my brother and his family live in Murfreesboro. (Big horse country isn't it! lOL) OUr best friends live in Cambridge England and we dearly miss them. I can't say they are really happy over there (SOmething about the cost of eating out and owning a car??) but they love their jobs and friends. We send them " care packages " of requested items and often send them Smoky Mountain calanders as he dearly misses our seasons, " green " and fall colors! Us southerners were raised on bacon, ham and fried chicken so its hard to break habit with old timers set in their ways. But I also think it is the meat eating public in general, not just down south. Its almost as if they ( " They " as in meat eaters.) are scared of why you are doing anything different that they are. Who knows...perhaps they think we think we are doing something better or healthier, or they feel intimadated because they are not doing it. People often have a hard time thinking outside the box and if you are the least bit different for them, its hard for most to except. Sometimes its really strange and " they " can be really defensive about it, and I am even talking about my closest friends and family! LOL I am buddhist so down here in bible belt country...you can just imagine!! I am sure I am in many prayers and although most don't have a clue as to what it really is about, it scares them to death! Hope you enjoy the states! Erik... > Treatment of young coconuts seems to vary quite a bit. I've had some that made me sick from the herbicides they put on the outside (yes I think it got inside). The best bet is to get them from greencoconuts.com - although it's expensive. They are completely organic, grown in Florida. There may be a source closer to you, but I don't know of one. I've had some from Seattle area stores (where I used to live) and from the co-op in Pittsburgh (near where I live now) that I felt OK after. Unfortunately there's no better way right now to tell how good they are except eating and seeing how you feel afterwards (around here anyway). Hope this helps.
