could you dry it? i've never tried it but it might work...

 

 

 

Hi,I'm new here and have a quick question. I'm wondering if anyone has goodideas for preserving eggplant. We currently have more eggplant than Ithink we'll be able to use fresh and I'm looking for ways to preserve it.I thought about making a big batch of baba ganouj and freezing it insmaller containers. i don't think drying it would be too good. maybe roast it and freeze it? i know that works well for peppers. what about maybe preserving them in olive oil? again, like roasted red peppers. i am sitting here thinking hard, and also realizing that i have never seen eggplant frozen on the veggie frozen food aisle, the only exception being breaded...there is an idea.

Thanks for the eggplant storage ideas. Roasting and perserving it like

roasted red pepper is a neat idea; I love roasted eggplant. I may give

that a try.

 

I hauled out a book published by our local Community Supported Agriculture

Cooperative on preserving foods and they too indicated that eggplant is

best used fresh and suggested making baba ganouj and freezing it as a

storage method. They said that unprocessed eggplant doesn't hold up well

to freezing.

 

I figured out a very fun and quick way to prepare fresh eggplant. Its

barbaqued eggplant; thought I'd share for anyone interested.

 

Peel the eggplant and cut it into either rounds or slices about 1/4 inch

thick. Lay the pieces of eggplant on a cookie sheet or broiler pan.

Spread the up-facing sides of the eggplant and all edges liberally with

your favorite barbaque sauce and broil for five minutes. Flip the eggplant

pieces and spread with more sauce and broil another 5 mintues. Serve over

a bed of couscous....very yummy. Our toddler even liked it!

Hi I am new here!

 

I just made a really yummy egg plant dish tonight.

peeled and thinly sliced eggplant, fresh tomatoes sliced,

fresh onion sliced thin, cheese of your choice and red pasta sauce of

your choice.

Layer starting with eggplant then top with the sauce.

Bake in oven at 350 for about 20 minutes.

Oh, I forgot I sprinkled some garlic and oregano over the dish before

the sauce.

 

You can serve over noodles or just eat alone.

 

I think you may be able to prepare in those tin baking pans and then

freeze the whole thing after cooking.

I usually don't spend a lot of time cooking with recipes. I love eggplant.

I saute with green beans, tomatoes, onion, garlic, etc. It goes well

sauted with most veggies.

When I was much, much younger, my Italian Mother in Law (ex for over 45

years now) taught me how to make eggplant parmigiana. She would not hear of

cooking eggplant until she had:

 

1. Sliced it into circles

2. Stacked it in a bowl on top of paper towels

3. Put another paper towel or two on top

4. Weighted it on top with a heavy plate

5. Put it in the refrigerator and let it sit overnight before using it.

 

The next day we would rinse it, dry it on paper towels bread and fry it, and

then proceed with the rest of the recipe. It was WONDEFUL! It never had a

bitter taste, and was not mushy when cooked. To this day I still make it the

same way.

Katie, I believe there there are vitamin bs in whole wheat, and most whole grain

if not all?

so she might not be eating that badly.

 

Most people that dislike eggplant probably have had it not cooked right. The

worst

mistake is to undercook it. Raw egglant is awful even for us eggplant lovers.

Your sauce

idea is great. Some folks that claim not to like eggplant are surprised to find

out that

baba ganouj is almost all eggplant!

I like them sliced thin, brushed with olive oil and grilled. You could do

them like fried green tomatoes too, without using too much oil they wouldn't be

too fatty.

Bread it and lghtly fry in olive oil. Bread some sliced zucchini or yellow

squash to go along with it. It is great.

Dice it, and fry it slowly with onions until they caramlize. Then add a tin of

lentils and cherry tomatoes and cook till they pop and season. I used a teaspoon

of cumin and black pepper, was lovely.

Someone told me about this and I improvised it last

night - WONDERFULL!

 

I don't have an exact recipe, but this is basically

what i did...

 

slice 1 large eggplant

 

soak in salt water till the water starts to get dark

 

drain and rice eggplant slices

 

broil (grill) eggplant slices on cookie sheet about 15

minutes,

flipping halfway through - eggplant should be cooked

but not withered...

 

layer like lasagna:

 

tomato sauce

eggplant

riccotta / cottage cheese

tomato sauce

mozzarella

tomato sauce

eggplant

riccotta / cottage cheese

tomato sauce

mozzarella

 

basically, use the eggplant instead of the noodles. It

really came out

great

Can you believe that I am allergic to eggplant? It was always one of my

favourite foods and I developed an allergy about 9 years ago and can't eat it

anymore. This gives me a lot of grief.

Zucchini has been one of my favorites and I suddenly developed an allergy to it.

Fortunately I can still eat yellow squash, which I substititue in most recipies.

Spicy EggplantEggplant with an Indian flareIngredients (use vegan versions): 10 Indian eggplants, stems removed and cut lengthwise into 1/2" pieces 1 small onion, minced 1/2 cup canned crushed tomatoes 1/4 cup raw peanuts 1 t cumin seeds 1/2 teaspoon coriander seeds 1/2 teaspoon sesame seeds 1 dried red chili (or more depending on how hot you want it) 1 small cinnamon stick 1/4 teaspoon turmeric 1/2 teaspoon tamarind paste brown sugar salt vegetable oilDirections:The Indian eggplant and spices can all easily be found in any Indian grocery store.In a small saute pan, heat about 1 t of oil. Add the peanuts and fry until they begin to brown, stirring frequently. Add cumin, coriander, sesame, red chili, and cinnamon stick. Fry everything until it becomes very fragrant. Transfer to a blender or food processor. Add enough water to allow everything to blend easily and grind to a paste.In a large saute pan, heat 1-2 tablespoon oil and saute eggplant with a bit of salt added until it has browned. Transfer to a bowl or plate.In the same saute pan, add another tablespoon of oil, if necessary, and saute onion until translucent. Add tomatoes, ground spices, turmeric and tamarind paste and more salt if needed. Add a pinch (~1/2t brown sugar). Cook for a few minutes and add the cooked eggplant. Cover and cook on med low for about 5 minutes or so. Add a bit of water if the sauce becomes too thick.Serve with rice or naan.Serves: 4Preparation time: 45 minutes

Eggplant ParmesanMain dish.Ingredients (use vegan versions): 1 eggplant soy milk flour, garlic, salt, pepper, oregano homemade or store bought bread crumbs olive oil 1 onion, chopped 1 bell pepper, chopped 8-10 mushrooms, sliced olives, sliced 1 clove garlic, minced 1 14 oz can chopped tomatoes 1 14 oz can tomato sauce oregano, basil, rosemary, salt and pepperDirections:Make red sauce first: In skillet saute onion and bell pepper. Add in mushrooms, olives and garlic. Cook through. Add in canned tomatoes with juice, tomato sauce and herbs to taste. Let simmer while preparing eggplant.Slice eggplant into 1/2" thick slices. Put a fresh skillet on the fire and heat 1/4" of olive oil until smoking, turn down heat. Put soymilk into a plate for dipping. Mix together flour, some garlic salt, pepper and oregano for dredging, this can go on a sheet of waxed paper. On a another sheet of waxed paper, spread out some bread crumbs. Dip both sides of each eggplant slice into soy milk. Dredge in flour mixture. Dip into soy milk again, dredge again. Dip into soy milk and dredge through bread crumbs. Fry both sides in skillet, remove when done to paper towels to drain.Place two or three eggplant slices on serving plate, cover with red sauce. Sprinkle with vegan mozzarella and parmesan if desired.Serves: 4-6Preparation time: 45 minutes

Devine EggplantIngredients (use vegan versions): 3 tablespoons of dark sesame oil 1 onion 1 medium size Eggplant 3/4 cup of unfiltered apple juice 1/2 cup of cashew nuts 1/4 cup of Tamari or Soy SauceDirections:Slice onion anyway you want.Saute in oil until golden.Slice eggplant into 2 by 1/2 slices, add to onions.Saute for about 10 minutes.Add applejuice and cashews.Simmer until apple juice is reduced to about half the amount -- about 10 minutes.Remove from stove and add Tamari to taste.Serve over rice.Serves: TWOPreparation time: 20 minutes

Peas, Potato, and Eggplant CurryIngredients (use vegan versions): 2 Large potatoes 1 med. size eggplant 1 cup frozen peas 2 cloves garlic 1/4 lb. ginger 1 dried hot chili or 1/4 teas. chili powder 1 onion 1/2 teas. tumeric powderDirections:Wash and cut potatoes in small pieces. Cut eggplant into thin slices, about 2-3 inches long. Put it in water.With 2 Ts of water, blend the cloves of garlic, ginger, dried chili or chili powder, and onion. Make it into a thick mixture.Put a cooking pot over a low heat. (add oil). Add tumeric powder and blended spices. When the spices become relatively thick, add potatoes. Mix thoroughly and put thge lid on the pot. Let it cook 3 mins.Now, add sliced eggplant. Mix thoroughly. Add 1/2 C. water. Put lid on. Cook for 8 mins. You may want to check the veggies to make sure the bottom does not burn.Add peas and salt. Mix all veggies and put lid back. Cook for 4 to 9 mins. When the eggplants feels soft, turn off the heat, mix again.Serve hot or warm. Brown Bastmati rice is good with this.

Well, Dear...I have no clue about eggplant's chemistry nor of what transits out of the eggplant and into the water. That sounds wierd?

I do eat half a grapefruit every morning which is supposed to help.

Dont think there is anything nutritionally valuable in an aubergine is there? Probably the vitamin C in the lemon as an antioxident?

I am aware of how bad coconut oil is , so have cut down, I do take an EFA suppliment ( but mostly because I believe it helps with the migranes I rarely get ), dont know if it helps with HDL/LDL levels.

Hi Peter,I heard/read a couple of times of this homemade remedy for cholesterol.It's rather simple. Basically all You need is eggplant, water and lemon juice.So, in a jar put 1 eggplant thinly sliced and fill with 1 liter water.Let stand over night (in the fridge if you like).The next day remove the eggplant and add the juice of 1 or 2 lemons.Drink along the day. my parents were a bit like that, before I went vegie, and vegan when I was a kid, we didnt have much, so it was a question of eat whats there or go without. my mother always seemed to be in the kitchen, cooking/baking making jam etc......... ...she still cooks for me ..........

actually had eggplant saturday afternoon...we went to new world and had something called Eggplant Supreme. (or something like that...)

pretty good, actually the eggplant was sorta crispy...

and a bunch of their yummy spring rolls.

and a ton of beer at the Trappist

 NO - definitely not. I don't cook aubergine very often, but when I go out I sometimes have garlic aubergine with green bean rice. I must find out how that is made and let you know.

Well, Dear...I have no clue about eggplant's chemistry nor of what transits out of the eggplant and into the water. I do eat half a grapefruit every morning which is supposed to help.

Dont think there is anything nutritionally valuable in an aubergine is there? Probably the vitamin C in the lemon as an antioxident?

I am aware of how bad coconut oil is , so have cut down, I do take an EFA suppliment ( but mostly because I believe it helps with the migranes I rarely get ), dont know if it helps with HDL/LDL levels.

my exchange student from italy a few years back , tried to make eggplant parm.. and it was gross.. it was hard... then we saw on good eats.. you ar supposed to soak them.. but she didnt do that part..

i love eggplant parm at resteraunts. :)

actually it didnt have cheese. and she made her own tomato sauce. which i found to be very bland. italians dont use a lot of spices in their foods. i think here as americans we tend to over spice a lot of things.

when her mom came out at the end of the year.. everything she made, tasted bland to me. adn all our foods tasted to rich and salty for her.

I do eat half a grapefruit every morning which is supposed to help.

Dont think there is anything nutritionally valuable in an aubergine is there? Probably the vitamin C in the lemon as an antioxident?

I am aware of how bad coconut oil is , so have cut down, I do take an EFA suppliment ( but mostly because I believe it helps with the migranes I rarely get ), dont know if it helps with HDL/LDL levels.

without, cruncy bland eggplant, that was hard... with stwed tomatoes with no flavor.. and we sat and ate it all to be nice lol.. i have a hard time telling people that things taste bad if they made it....
