Guest guest Posted August 29, 2009 Report Share Posted August 29, 2009 Chickpea Rosemary Soup This is so quick to make and tasty. 3 T. olive oil 8 garlic cloves, finely chopped 1 T. minced fresh rosemary leaves 1/2 crushed red pepper 3 - (15 - 19 oz) cans of chickpeas, rinsed and drained 4 cups of vegetarian " chicken " style broth - 4 c. water + 4 t. McKays " Chicken " style powdered seasoning*. or Vegetable Broth. 2 T. Lemon Juice, fresh Sea salt to taste In a large saucepan, heat 3 T. oil over med. heat. Add garlic, rosemary and red pepper flakes. Cook sitrring constantly, until it starts to brown, about 1 minute. Add chickpeas and cook 2 minutes, stirring constantly. Add broth and bring to a boil. Reduce heat and simmer 30 minutes. Transfer soup to a blender, cover and blend until smooth. Stir in lemon juice and salt into soup to taste. Makes 6 servings. Any comments ?? Is this really OK for vegetarians? Disodium inosinate Disodium inosinate does not contain MSG, but works synergistically with free glutamic acid. When disodium inosinate is found on a food label, consumers can be fairly certain that the labeled product contains some hidden processed free glutamic acid (MSG). They are also low in sodium compared with other vegetarian broth seasonings. If you are sensitive to it or would prefer a different seasoning, try the Bill's Best Seasonings they don't have that in them. http://www.truefoodsmarket.com/product_info.php/manufacturers_id/161/products_id\ /6265 Or you can make your own using this recipe. " Chicken Seasoning " 1 1/3 c. Nutrititional Yeast Flakes 3 T. Onion Powder 2 1/2 t. Garlic Powder 2 1/2 t. Salt 2 T. Parsley 1/2 t. Celery Salt 2 T. Italian Seasoning 1 t. Tumeric Mix together and store in a ziplock bag for use in recipes that call for Chicken Seasoning. It is good in Soups, breading meal and for use in making Scrambled Egg Tofu.
