Guest guest Posted April 13, 2008 Report Share Posted April 13, 2008 Tomato Cucumber Salad Source: Total Health Cookbook 3 1/2 cups chopped tomatoes 3 1/2 cups chopped cucumbers 1 medium onion, chopped Marinade: 1/3 cup garbanzo juice (reserved from any can of garbanzos) 1/3 cup lemon juice 2/3 tsp. salt 1/2 tsp. celery seed 1/2 tsp. honey (or alternative) Combine tomatoes, cucumbers, and onion in a bowl. Combine all Marinade ingredients in 2-cup measuring cup and pour over salad. Serve immediately, or let marinate in refrigerator. Serves 6.
