Guest guest Posted January 23, 2008 Report Share Posted January 23, 2008 Pastel Fruit Popsicles For each flavour, you will need 8 x l/4 cup-capacity popsicle moulds. Make popsicles in disposable drinking cups using wooden popsicle sticks if you like; fill cups about l/3 full. 1/2 fresh pineapple, peeled, cored and chopped 1 cup orange juice 650 g (23 oz) seedless watermelon, peeled, chopped 8 teaspoons lime -OR- lemon juice 1. Blend or process pineapple until almost smooth. Combine 1 cup of the pulp with orange juice. Pour mixture into an 8-slot popsicle mould. Insert popsicle sticks (most pospicle moulds come with moulded lids/sticks). Freeze overnight. 2. Blend or process watermelon until smooth. Strain into a large jug and discard pulp. Combine 1 cup watermelon juice with lime juice and 1/2 cup water. Pour mixture into an 8-slot popsicle mould freeze overnight until firm. 3. To serve, dip moulds briefly into hot water and gently ease out popsicles. VARIATIONS: Use apple, mango or tropical juice instead of orange if you like. Makes 16.
