I need a recipe..

Hi!

 

I need a recipe for banana bread. It has to be free of soy (including

tofu), diary, eggs, rice flour, cornflour, coconut flour, and sugar

free (I can have some sugar substitutes)

Here's a few from the Files. One does contain a small amount of rice

flour that could easily be subbed out. Two also contain sweeteners

that could also be easily subbed with whatever sugar sub you are able

to use.

 

 

 

Banana Bread

Source: Allergy Cooking with Ease

 

2 cups amaranth flour plus

1/2 cup arrowroot

2 tsp baking soda (bicarbonate of soda)

1/2 tsp unbuffered Vitamin C crystals (-OR- lemon juice)

1/2 tsp ground cloves (optional)

1/2 cup chopped nuts (optional)

1 3/4 cups mashed ripe bananas

1/4 cup oil

 

Stir together the flour(s), baking soda, Vitamin C crystals, cloves,

and nuts in a large bowl. Combine the mashed bananas and oil and stir

them into the dry ingredients until they are completely mixed in, but

be careful not to overmix.

(The batter will be stiff). Put the batter into an oiled and floured

9 " x 5 " (23 x 13 cm) loaf pan and bake at 350 F (177 C) for 55 - 60

minutes, or until the bread is lightly browned and a toothpick

inserted in the center comes out dry. Remove it from the oven and

allow it to cool in the pan for 10 minutes. Remove it from the pan to

cool completely.

 

Makes one loaf.

Wheat free, Sugarless Banana Bread

 

1 cup chopped nuts

1 3/4 cups amaranth flour, sifted

1/4 cup buckwheat flour; sifted

1/2 cup arrowroot -OR- cornstarch (cornflour)

1/2 cup water

2 tsp baking soda (bicarbonate of soda)

2 cups well ripened banana; mashed

1/4 cup oil, vegetable

 

2 egg whites beaten (optional)

1 tsp vanilla

 

 

Process the 1 cup nuts in a food processor until fine to medium

ground. Mix the nuts with the flour, arrowroot and baking soda in a

large bowl. In a separate bowl, mix together the bananas, oil, honey,

eggs, and vanilla and water. Then pour the liquid mixture into the

flour bowl and mix with a few swift strokes. Then pour into a greased

bread pan. Bake on top of a cookie sheet/pan at 350F (177C) for 55 to

60 min or until a cake tester inserted in the middle comes out clean.

Let cool in the pan for 30 min before serving.

Awesome Banana Bread

 

Recipe came out of necessity - adapted from the back of the quinoa

flakes box.

 

 

1/2 cup quinoa flakes

1/4 cup nut meal (I used hazelnut meal from TJs)

1/4 cup rice flour

1/2 tsp guar gum

1 Tbsp (3 tsp) egg replacer + 1/4 cup water

2 Tbsp (30 ml) maple syrup

1/2 tsp salt

1 1/2 tsp baking soda (bicarbonate of soda)

1 tsp cream of tartar

1 cup mashed ripe banana

 

Preheat oven to 400 degrees F (204C)

 

Mix dry ingredients together, add maple syrup, water/egg mixture, and

mashed bananas. Mix well. Line loaf pan with foil and spray with oil.

Pour mixture into pan. Bang a couple of times on counter to release

air pockets.

 

Bake 35 minutes or until a toothpick inserted comes out clean.

Cranberry Banana Quinoa Bread

This gluten and dairy-free version of this festive bread will make a

delicious addition to your holiday breakfast menu.

 

 

3/4 cup quinoa flakes

1/2 cup garbanzo (chickpea/besan) bean flour

1/3 cup potato starch

1/3 cup tapioca flour

2 tsp GF baking powder

1/2 tsp salt

1/4 tsp xanthan gum

1 1/4 cups ripe mashed banana pulp (about 3 bananas)

substitute for 2 large eggs (EnerG)

1/3 cup non-hydrogenated, non-dairy margarine, melted, cooled

1/2 cup granulated sugar

1/2 cup dried cranberries

1/4 tsp freshly squeezed lemon juice

 

Ingredient Option: substitute canola oil for the margarine.

 

Preheat the oven to 350°F (175F). Lightly grease an 8 1/2 by 4 1/2 by

2 1/2 " (22 x 12 x 7 cm) loaf pan with a small amount of margarine.

 

Combine the quinoa flakes, bean flour, potato starch, tapioca flour,

baking powder, salt and xanthan gum in a large bowl. Mix together with

a whisk and set aside. Whisk the mashed bananas, egg substitute and

margarine together in a bowl. Add the sugar, cranberries and lemon

juice; mix until blended.

Gently stir the banana mixture into the flour mixture until just

combined. Do not over mix the batter.

 

Pour the batter into the prepared loaf pan and bake until lightly

browned, about 40 minutes. Allow the bread to cool completely in the

pan, about 1 hour.

Turn the bread out onto a cutting board and, using a serrated bread

knife slice the bread into 3/4-inch (2 cm) thick pieces. Arrange on a

platter and serve.

 

 

Serves 9.

Dunno if you found one yet, but hopefully this will work for you.

 

 

Gain Free Banana-Nut Muffins

 

0.75 c. white buckwheat flour

0.75 c. quinoa flour

0.5 c. amaranth flour

1.5 t. baking soda

0.5 t. unbuffered vitamin C crystals

0.25-0.5 t. nutmeg (optional)

0.67 c. chopped Brazil nuts (or another nut)

5 bananas (2 c. about 1.5 pounds)

0.25 c. canola oil

0.25 c. agave nectar, maple syrup or honey

 

Preheat to 375.

 

Oil 12 -cup muffin pan

 

Sift first 6 ingredients into bowl.

 

Stir in nuts.

 

Break 4 bananas into 1 " pices in place them in a blender. Process

for 30 seconds or until smooth. Add remaining banaa if needed to

make 2 c..

 

Add last 2 ingredients and process until mixed.

 

Pour banana mixture into flour mixture and mix until just combined.

Don't overmix.

 

Spoon into cups.

 

Bake for 17 to 20 minutes or until firm to touch.

Thanks for all the banana bread recipes. My middle daughter and I tried

one recipe today. We decided to try each banana bread recipe (baking 1

each week until we go through all the recipes) until we find one or two

we like.

Renee, I'd really be interested in adding your comments for each one to our

files. Can you let us know how they turn out and how you like them? What a

neat idea, to bake a different one each week.
