In a classic Garni, as below, remember that the larger the garni, the stronger the flavor so don't use too much and overpower a small sauce or not use enough and lose its' effect on a large pot of soup. For an average size pot of soup : 1 small bay leaf -OR- branch of fresh 3 sprigs of parsley 1 small sprig of thyme Tie the herbs together or you can combine the herbs in a piece of cheesecloth which is then gathered and tied.
