Guest guest Posted March 30, 2007 Report Share Posted March 30, 2007 Fruit with Passionfruit Syrup 1/2 cup sugar 1/4 cup water 2 large passionfruit, pulp removed 1/2 pineapple, peeled, cored, sliced into rings 2 mangoes, cheeks removed 1/2 cup coconut milk flaked coconut, to serve 1. Cook sugar and water in a saucepan over low heat, stirring, for 4 minutes or until sugar dissolves. Increase heat to high. Add 1/3 cup passionfruit pulp. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 5 minutes or until thickened slightly. 2. Preheat barbecue plate on medium heat. Brush pineapple and mango with a little of the syrup. Cook pineapple for 2 minutes each side and mango for 3 minutes, cut-side down, or until caramelised. 3. Combine remaining syrup and coconut milk. Place fruit into bowls. Drizzle with syrup mixture.
