a bag of stir fry veggies (pre-cut) into a quick-cooking red curry sauce over

quinoa

We seem to be in a dinner rut.  What are you making for dinner tonight?

Hi Robin,

Well, tonight will be lack-luster since I've had a flu - so a left-over

brothy Thai tofu veggie soup and rice for me, likely, and probably

left-overs for the rest of the family. But, next time I'm up for

cooking/eating normal food, I'll be making a lasagna with whole wheat

lasagna pasta, steamed and sliced orange winter squash, mozzarella, and

pesto sauce, with a big green salad and homemade balsamic vinaigrette -

and likely strawberries since we're getting 3 boxes a week from our CSA.

:-) And sometimes what I do when I've run out of ideas is pick an

ingredient that we have a lot of (due to our plentiful CSA share) or an

ingredient we're just in the mood to eat, and look that up in indexes of

cookbooks or google the ingredient and " recipes " and usually find

something that way.

Good luck finding some new dinner ideas!

Sorry to hear about your job loss, Robin. That's a lousy thing to happen.

Good luck in your future job search.

 

I have found us to be in a dinner funk lately too, but I also have found

that planning my meals for the week helps. Last night, for the record, was

taco night. ;)

We would up with breakfast for dinner last night:  blueberry pancakes with a

side of cooked fruit.  For tonight, I'm making a veggie stew with biscuit

topping in the slow cooker.

Greetings from the balmy SW desert of Arizona.... I'll send you some

sunshine in trade for some snow as my 5yr old is itching to make a

snowman some day!

 

Although it's been in the mid-70's, I still love a good soup as it

will stretch a couple of days.

 

Scrumptious Corn Chowder - from www.vegweb.com

Ingredients (use vegan versions):

• 1/2 sweet pepper, finely diced (optional)

• 1/2 large vidalia or yellow onion

• 1 large red or white potato

• 3 cups water

• 3 tablespoons nutritional yeast (divided, see below)

• 1 tablespoon vegetarian chicken-flavored broth mix

• 1 teaspoon Lawry's seasoning salt

• 1 teaspoon Mrs. Dash,

• 1 teaspoon poultry seasoning

• 3 cups frozen (or blanched, fresh) corn kernels

• 2 cups soy milk or other non-dairy milk

Directions:

This is one dish that will surely have some of your non-vegetarian

friends looking at you with suspicion and asking, " are you sure

there's no cream in this? " It is rich and satisfying, while low in

fat and calories. It is also a properly combined food and perfect for

a quick, cozy supper or light lunch.

Sautee the onions and red pepper in a non-stick pan or with a spray

of non-stick coating until the onions are translucent. Add the

potatoes and continue to sautee for five more minutes, stirring often

to prevent sticking.

Add the water, two tablespoons of the nutritional yeast, the broth

mix, salt, and herbs. Simmer for twenty minutes until the vegetables

are completely cooked.

Meanwhile, blend the oat milk, one cup of the corn and the remaining

yeast in a blender until absolutely smooth and creamy.

Just before serving, add the other two cups of corn to the broth and

vegetables and simmer 4-5 additional minutes until the corn is hot.

Then add the oat/corn cream to the soup and heat through. Do not

boil, as the " cream " will tend to separate if you do.

Serve with a green salad and slices of whole-grain vegan bread for a

wonderful, hearty meal on a cold winter day.

Serves: 4-6

Preparation time: 30 minutes

My husband made baked potatoes and creamed spinach.

I don't have his recipe, I do know that he used frozen chopped spinach,

Veganaise and tofuttie cream cheese. It was very good. My daughter and I

sauteed some Morning Star Meal starter strips with some garlic, fresh basil and

parsley for her and I to go with the potatoes.

I am going to have something very simple tonight.

Tired from a full day at work. Probably make some

mac & cheese, sauted broccoli, and maybe some

Quorn brand naked cutlets [love those].

Last night was sauteed mushrooms, onions and peppers folded into a lovely, thin

omelet, blueberry muffins and a fruit compote. Nummies.

 

In a couple of minutes, I'm going to toss zillion bean chili into the crock pot

and we'll have that with either tortillas or corn bread, depending on if I can

stand up long enough to make the tortillas.

 

No recipe for the zillion bean chili, I usually just toss handsful of all the

beans, peas and lentils that I have stored in glass jars into the pot along with

diced sweet peppers, onions, a diced jalapeno pepper, chili powder, a touch of

molasses 'cause we like it sweet and hot,  a jar of diced tomatoes I put up last

summer, and probably a diced sweet potato just to keep people asking " What IS

that, I can't place it " when they eat some. Heh heh heh. Of course Carl will

just eat what I put in front of him.

I went to an omnivorous friend's 30th birthday party, but they were sweet enough

to cook just for my sister and me.  We had fresh veggies with dip, mac and

cheese, potato salad, and the treat prepared just for us: spinach ravioli with

pesto sauce.  So good.  And of course the cake!
