Guest guest Posted October 13, 2006 Report Share Posted October 13, 2006 Whole-Grain Pancakes 1 1/2 cups whole-wheat pastry flour 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 tablespoon oil 1 1/2 cups milk (or soy milk) 1/2 teaspoon vanilla Whisk first four ingredients, then add oil, milk and vanilla and whisk lightly to blend ingredients; some lumps should remain. Use a 1/3-cup measure to scoop batter into hot skillet. Cook over medium-high heat until bubbles appear across the surface, then flip. Serve with honey, fruit preserves or maple syrup. Makes 7 pancakes. Orange pancakes: Omit sugar, substitute orange juice for the milk and use 1 teaspoon baking soda instead of 2 teaspoons baking powder. All new Mail Get news delivered.
