Broccoli, Chickpea, and Tomato Salad

from Martha Stewart, Everyday Food Website

 

Serves 6; Prep time: 20 minutes; Total time: 20 minutes

 

 

 

1 pound broccoli

 

1 tablespoon Dijon mustard

 

2 tablespoons red-wine vinegar

 

2 tablespoons olive oil

 

1/2 small red onion, minced

 

Coarse salt for seasoning

 

1 pint cherry tomatoes, halved

 

1 can (15 ounces) chickpeas, drained and rinsed

 

1. Cut florets from broccoli (reserve stalks for another

use). Steam until crisp-tender.

 

2. In a large bowl, whisk mustard with vinegar, olive oil,

and onion; season with salt.

 

3. Add tomatoes, chickpeas, and broccoli; toss to coat.

Serve chilled or at room temperature.

 

Per serving: 131 calories; 5.9 grams fat; 5.5 grams protein;

15.8 grams carbohydrates; 4.9 grams fiber

 

I added 1 tsp. Tony Chachere's Creole seasoning to the dressing

mixture.

This sounds really good, Judy. I like the Everyday Food magazine

subscription my sister got me for Xmas. Even though a lot of the

recipes contain meat in them, I still find many recipes I can easily

adapt and there are always several wonderful vegetarian recipes

per issue. :)

Yes I have picked up that magazine before and enjoyed the recipes in it. I got

this one off the www.marthastewart.com website. I like this recipe a lot and

have found many good recipes on it. I am a big Martha Stewart Fan. Her shows

are like comfort food to me. LOL I am so glad she is back on with new shows

again. I watched her old shows on the Style Network TV station while she was in

prison. Those older shows are my favorite format, but the new ones are good

also.
