BBQ recipe shared as a 'thank you!'

A few weeks ago I asked here for ideas for low-fat bbq options, for

one of my cooking demos.

 

I've done a lot of bbq-ing since then and I've got a few recipes I'm

really really happy with!

 

Just as a thank you to everybody on this very helpful and nearly-

always kind and thoughtful list, I thought I'd share on of my new

favourite bbq recipes. It's not super-low-fat because of the peanut

butter and the peanuts - I walk a bit of a tightrope in my classes,

trying to share recipes which are unusually low in fat and yet

represent well for people who may be new to veganism.

Capsicum stuffed with nutty brown rice

 

 

 

1 cup medium-grain brown rice

 

2 cups water

 

 

 

4 teaspoons soya sauce/tamari

 

¼ cup peanut butter

 

1 teaspoon cider vinegar

 

½ cup peanuts, toasted and roughly chopped

 

 

 

2 red or yellow capsicums

 

 

 

1. Put the rice and water in a medium-sized pot and bring to the boil.

2. Turn the heat down and simmer for 40 minutes.

3. Remove from the heat and stir in the soya sauce, peanut butter,

vinegar and peanuts.

4. Prepare the capsicums by cutting them in half (from the stalk

end to the other end) and removing the stalk and seeds.

5. Fill the cavity with the nutty rice and bake in a hot oven for

about 20 minutes, until the capsicum is soft, or barbecue for about

10 minutes per side.

 

 

Optional cheesiness:

 

Replace some of the soya sauce with equal quantities of plain or

chilli fermented tofu).
