Lately, my favorite is to stew them in V-8 or other tomato/veggie juice,

and then at the very end, thicken the juice a little with cornstarch. I

also like sprinkling zucchini (cut in half vertically) with some seasoned

salt or salt-free seasoning and roasting at 400F for about 15-20 minutes.

I put a layer of zuchini in my lasagne, in the bottom of the pan on top of sauce. Also a layer of fresh spinach and fresh mushrooms.

 

Also make zuchini chips and dip in marinara. Pour the tiniest dollap of EV olive oil in a pan. Dunk thin slices of zuchini first in water, then whole wheat flour, then water again, and then flour again. Fry on medium/low heat, turning once.

 

Another is salad. I put zuchini in all my salads. Cucumber (with the skin), zuchini with the skin, tomato, red onion, celery, fresh parsley or cilantro, red or green peppers, etc. For a dressing add 1/4 to 1/2 cup of wine or cooking wine plus the juice from a whole lemon. Add seeds. I add about 5 kinds, sesame, sunflower, dill, celery, etc. Add some basil or Italian spice, salt and pepper.

 

Other good things in the salad are tiny brocoliettes, mushrooms, olives, artichoke hearts. But my base is always the zuchini and cucumber.
