Greetings,

We just returned from Jamaica tonight. We had ackee while we were there

prepared by Aris Latham as part of the All the Way Live retreat we were

on. It was magnificent.

Ackee can be eaten live straight from the tree (we had some all during

this trip). It's creamy and delicious. much like avocado but a bit

firmer. Also it need not be made with bacalao (salt fish) you can use

sea vegetables and it comes out great! It's a fantastic source of

protein and beneficial fats.

Many vegetables and fruits are not as appealing when cooked. This is

probably why children don't like cooked veggies but when presented raw

(like carrot sticks or even ackee) they love it.

Stay away from the canned version and get the fresh ackee - you can find

it in Florida. We picked some off a neighbors tree in Florida when we

visited my mom in December. The ackee salad I made from it was very well

received by my family and extended family although they were very

accustomed to eating it cooked. And also they were under the Caribbean

cultural interpretation that ackee can kill you if eaten raw. :-) The

reality is that id the ackee pods haven't opened it is toxic. nothing to

do with cooked or live.

If you happen upon some, I'll hook you up with a recipe or 2 and let me

know how it goes.

Be well,

p.s. - as for breadfruit, I learned that you need to let it ripe and it

becomes sweet, creamy and rich tasting. No need to roast it---that is

force ripening it and it never gets sweet.
