Cinnamon--is it raw?

I am working on a recipe for raw carrot cake. Cinnamon would spice it

nicely! Does anyone know if cinnamon is raw?

Hi Jenny,

 

Here's a Web page containing everything you'd care to know about cinnamon

and a spice similar to cinnamon called cassia (Cinnamomum cassia):

It says that once harvested, both roll up into " quills " when they are dried

in the sun. Due to their similar properties, cinnamon and cassia are dealt

with together. Ground cinnamon of commerce may comprise cinnamon or cassia.

 

The Web page also included info on " Toxicity/Hazards to health " :

 

On exposure to moisture, the cinnamaldehyde present in cinnamon is

converted into styrene. Styrene vapor irritates the respiratory tract and

eyes, while direct contact with liquid styrene also causes eye and skin

irritation.

 

In addition, cinnamon may sometimes be infested with insects.
