These are some favourites from Sabbath afternoon potlucks. These are probably

from the late 60's to early 70's. There were very few vegan dishes at the

potlucks back then, and a quite liberal use of eggs and cheese.

Company Roast

Amount Measure Ingredient -- Preparation Method

1 large can Vegeburger

2 cups natural brown rice -- cooked

2 cups seasoned bread crumbs

3 eggs

1/3 cup salad oil

1 medium onion -- finely chopped

1 small can mushrooms -- finely chopped

1 tablespoon finely chopped parsley

1 cup chopped nuts

1 cup hot water with 1 heaping tablespoon Vegex

and 1 tablespoon butter

 

Mix all ingredients and pack into a well oiled bread loaf pan. Before putting

into oven, pour hot water with Vegex and butter over roast. Bake in a 350° for 1

to 1 ½ hours.

NOTES : For special occasions, place pineapple rings and maraschino cherries in

the bottom of the loaf pan before adding roast mixture. Turn out onto platter

when ready to serve.

Millet Casserole

Amount Measure Ingredient -- Preparation Method

1 large onion -- chopped

2 cups thinly sliced celery

1 large can glutenburger

1 1/8 cups hulled millet

1/8 teaspoon garlic powder

1 can mushroom pieces -- (8oz)

1 can mushroom soup

2 cans water

1 teaspoon salt

1 teaspoon poultry seasoning

1/4 teaspoon MSG or Accent or never mind....

 

Sauté onions and celery in oil until clear. Brown glutenburger and mushrooms in

skillet and add remaining ingredients. Pour into oiled casserole and bake in a

300° oven for 1 hour.

Mr. America Cashew Loaf

Amount Measure Ingredient -- Preparation Method

3 cups raw cashew nuts

2 medium onions

¾ cup milk

½ cup skim milk powder

1 teaspoon paprika

1 can Glutenburger (14 oz.)

½ cup wheat germ

5 eggs

1 tablespoon soy oil

¼ cup minced parsley

1 tablespoon Bakon Yeast

1 teaspoon celery salt

1 teaspoon sage

1 teaspoon salt

 

Put nuts and onions through food chopper. Combine powdered milk with whole milk.

Combine all ingredients and mix well. Pour into oiled baking pan that has been

coated with sesame seeds. Cover and bake in a 325° oven for 1 hour. Serve with

country style gravy.

Mushroom-Nut Roast

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 pound mushrooms -- coarsely chopped

1 package Pepperidge Farm dressing mix

¼ pound butter -- melted

1 cup chopped nuts

1 cup grated cheese

4 eggs -- well beaten

1 large onion -- diced

¼ cup A-1 Steak Sauce

----Mushroom Sauce----

2 cans mushrooms (reserve liquid) -- (3 ounce)

4 tablespoons butter

2 cans undiluted cream of mushroom soup

juice from mushrooms

1 cup sour cream

Salt and pepper to taste

Paprika

 

For mushroom sauce:

Sauté mushrooms in butter. Add cream of mushroom soup, juice from mushrooms and

sour cream. Season to taste. Let simmer for 10 minutes and sprinkle generously

with paprika.

 

For roast:

Mix all ingredients together and pour into a large casserole. Bake in a 350°

oven for 30 minutes. Blend steak sauce with 1/2 cup water and pour over top and

continue to bake for another 30 minutes. Serve with mushroom sauce.
