Yummy cheese sauce

Anyone have a recipe they like for a yummy cheese sauce to put onver

cauliflower or broccoli?

Hi

The cheese sauce recipe I use has Rotel tomatoes in it and is

originally for Mac and Cheese, but I loved this sauce so much, I use

for everything. The only problem is, it makes a whole bunch, but I

bet it would freeze okay. Hope you like it!

 

1 can (10oz) Rotel tomatoes

1/2 cup margarine

1/2 cup flour

2 cups milk

1 pound shredded cheddar cheese

 

Melt margarine over low heat. Stir in flour, cook 1 minute, stirring

constantly, until mixture is smooth and bubbly. Stir in milk slowly

and heat to a boil, stirring constantly. Reduce heat and simmer

until thickened, about 1 minute. Add cheese and Rotal tomatoes. Stir

until cheese melts. Remove from heat.

 

If you want to make mac and cheese this recipe calls for 3 cups of

uncooked macaroni.
