The only problem is, it makes a whole bunch, but I bet it would freeze okay. Hope you like it! 1 can (10oz) Rotel tomatoes 1/2 cup margarine 1/2 cup flour 2 cups milk 1 pound shredded cheddar cheese Melt margarine over low heat. Stir in flour, cook 1 minute, stirring constantly, until mixture is smooth and bubbly. Stir in milk slowly and heat to a boil, stirring constantly. Reduce heat and simmer until thickened, about 1 minute. Add cheese and Rotal tomatoes. Stir until cheese melts. Remove from heat.
