Hi Charlie,

 

Welcome to the group! Sorry I welcomed you in with my message about

the monkey - bad timing!

excuse my ignorance, but where exactly is baltimore?! I know its

somewhere in the US but that's it!

 

How long have you been vegan? I've been vegan for about 2 and a half

years now. I was finding it quite easy but I've actaully started

finding it more difficult again now. I live in Kent in the UK, but I

know there are some more US vegans on the site.

anyway, sorry for the short message but I'm off to lunch!

as fer vegan on a budget.....

my advice, stay away from the processed "vegan" goodies and foods...

there is a wealth of fruits and vegetables out there...

if ya don't know how to whip up yer own vegan delectables, take the time and get a book, look online, ask....

there do be ways!

as fer cookbooks..while i have a ton..i rarely ever use em...

i am mostly a "open fridge, close eyes, grab everything" sorta cook

heh heh...

Chilled Avocado, Tomatillo and Cucumber Soup with Saffron-Lime Ice

 

 

Saffron-Lime Ice

Juice of 2 limes

1/4 teaspoon saffron threads, soaked in 1/4 cup warm water for 20 minutes

1 teaspoon unrefined sugar

1 teaspoon Hungarian or Spanish paprika, toasted

1/2 cup water

1/3 teaspoon salt

 

Soup

1/2 yellow onion cut into 1/2 inch dice

4 cloves garlic, peeled

1 jalapeño chile

3 ripe avocados, peeled and pitted

8 tomatillos, peeled

1 English cucumber, peeled, halved and seeded

1/2 cup loosely packed cilantro leaves

1 teaspoon dried oregano, toasted

1/4 teaspoon freshly ground nutmeg

1/4 teaspoon freshly ground black pepper

juice of 1 lime

2 teaspoons light miso

3 cups water

salt

cayenne pepper (optional) 1/3 cup slivered almonds, toasted and very coarsely chopped for garnish

 

 

Serves 6 To Make the Ice:

Mix all of the ingredients together in a bowl and pour into a 2 inch deep pan. Freeze for 3-4 hour until solid.

To Make the Soup:

Heat a large non-stick sauté pan over high heat. Add the onions, garlic and jalapeno. Dry toast, stirring frequently, for 7-10 minutes, until half the onions, garlic and jalapeno are charred. Remove from the pan and let cool to room temperature. Peel and seed the jalapeño. Place the avocado in a mixing bowl with the cooled onion, garlic and jalapeno. Add the tomatillos, cucumber, cilantro, oregano, nutmeg, black pepper, lime juice, miso and water. In a blender, or using a hand-held immersion blender, blend the ingredients in batches until smooth. Add salt and cayenne pepper to taste. Refrigerate for at least 2 hours or until well chilled.

 

To Serve:

Ladle the soup into 6 martini glasses. Sprinkle toasted almonds over the top of each. Scrape the saffron ice crystals off the pan with a fork, and place 2 teaspoons on each serving of soup. Serve immediately.

But I'm also on a shoestring - I receive a healthy SSDI disbursement once a

month but pay high health insurance premiums and student loans. I eat a lot

of brown rice, fruits and veggies, and tofu. I only occasionally buy vegan

treats. I'm very fond of Knudsen's Grape Spritzers.

i found the transition to veganism to be easy as well. i think that if its something you really want and you are able to block those other foods out as things that "just arent there" then it is easy to not crave them.

i`m glad you chose to become vegan and i hope you find all the information and support you need here!

Melt the soy margarine, while melting combine the graham cracker crumbs, sucanat and cinnamon. Stir in the melted soy margarine and toss to mix well. Press into oiled 9" pie plate. Place in oven and Bake 375 for 6-9 minutes (if using a glass pie dish reduce oven temperature to 350), cool the pie crust thoroughly before filling. For Filling: Process the silken tofu in the blender until creamy. Add the melted, cooled chocolate and process until thoroughly blended. Add vanilla and any other flavorings you might enjoy. Process again. Pour into cooled pie crust and smooth out top. Chill at least 1 hour. Before serving spoon hip whip over top and smooth over entire pie, dust with cocoa if desired. Enjoy! Hmmmm.. I've seen that trick before... the Tofu Chocolate Pie sitting in the

middle of the floor distracts your attention, and before you know it....
