With two small children, I don't have time to slave over gourmet dinners either - and that's the beauty of vegetarian cooking - it's not only delicious - it's EASY. The hard part is learning new habits and ways of doing things, but once you do, vegetarian eating and cooking is easy. It's worth the effort, so give it a try.
