Don't know what you want the sesame seeds for, but if it is just the

flavor you might try raw tahini. Your coop may carry that.

 

As to the Chicago trip. Call them up, tell them about your dietary

restrictions and see if they can accomodate you in any way. The

probably serve some type of salad at this event and perhaps could just

make you a big one for your meals. Another option is to bring your food

with you. It is not unusual for me to bring dried fruit, nuts and/or

fruit with me to these things to supplement what little I will find

there to eat. You could also use this as an opportunity for a fast.

Thanks Mike, I don't think I am ready to fast when all about me are eating.

I'm not there yet. I did do a 3 day water fast last month but I was home and my

stomach was upset anyway - I gave it a rest. I have not finished my first

month of raw - almost there.

 

I want the sesame seeds for calcium.

 

I am concerned about ther raw tahini in jars - how do they process the

canning lids without heating? I wonder about that sometimes with raw honey and

other products. There is heating involved in most canning. I know - I used to

can

everything.

My advise would be not to worry about it. When I first started on raw food I

lost 40lbs in less than 3 weeks (my skinny pants were real loose so I weighed)

It was awesome and there was no extra skin flabbing around. It will surprise you

how much our bods take care of them selves when we give them proper nutrients.

Hi, Donna and Karen,

The large amount lost at first is mostly fluid. After that, it should

slow somewhat but that should help with the loose skin problem, too.

Our bodies need time to adapt to all the changes so don't try to take

it off too quickly. I lost somewhere in the neighborhood of 70 pounds

and I have a little loose skin on my belly but it's tightening up

with time. :-)

Karen,

 

I have been Raw for about a year now. I also let go of 120#s in the

last year, yes mostly from my Raw Food experience. Letting go and

changing my body was a choice NOT (emphasis for a reason), NOT because

I decided to change my diet to raw foods. It is a fact that people can

choose to eat raw and NOT let go of wieght and I've met people and

heard stories about people who even gain wieght.

 

I lost wieght rather rapidly, though safely and was very concerned

about the loose skin issues. You might notice in many boards that I

had posted a similar question to yours sometime late last summer -

after about 60 pounds had left me... I didn't get any substantial

answers, much support and many others expressing a similar concern.

Here's what I've found through research: If we are obese, we have

stretched our body and skin tightly for quite a period of time, most

often for years. Skin tends to be like an elastic band - stretch it

tightly for a long period of time and it stays stretched. (Don't worry

yet!) Fortunately making the choice to eat raw foods, gives our

stretched skin nutrients that it needs to repair itself. We are now

giving it more water, more fresh air & sunshine, more movement (walking

is great as is rebounding or just playing outside). Because of the

healthy stuff we are now giving our bodies, the skin has more of a

chance of repairing it's stretched appearance. I have been encouraged

to wait 2 years, letting my body repair itself and then to evaluate

what progress or stage my body is at. It may present an personal,

emotional issue this summer when wearing less clothes would let more

people view the changes my body is making. Though I do have some loose

skin, I do not see ugly. I have some wrinkles in the looseness around

my inner thighs, upper arms and belly area --- NOT nearly what I

imagined NOR nearly as bad as I have seen from others who lost

tremendous amounts of wieght quickly using other methods. I'm pretty

happy with my body at this stage. I do think (OPINION) that

stimulating the lymph glands and learning to look at and love my body

by dry brushing often before bathing and learning to just massage &

feel my body, I do think that this has helped both my perception as

well as the physical manifestation of my body.

 

I am very open about my process and am available online or by phone,

just contact me off the group. I will share whatever I can.

Encouragement and support are VERY important on this path. As is

learning how to use your intuition and then following through by using

it. That said - take what you need and leave the rest - Keep it Simple

Sweetie - use what you already have - less is more - only keep in your

homes what you consider to be beautiful or useful... (in my opinion

all great quotes, from great ppl)

Thank you for the insight, and to the others who responded with the same

reassurances. (about weight loss and hang loose skin) So I will just allow

the process to take place and continue to work on getting the best raw food

diet into my body, and not worry so much thanks again

wow I have never heard anyone losing that much weight in such a short time! Was

that just from going raw? Were you exercising a lot?

I'm also very new to eating raw... only about 1 week. I haven't

ventured into sprouting, dehydrating, juicing, and blending

(basically, most ways to prepare food!). Basically, here's what

I've been doing:

Breakfast: Piece of fruit

Mid-Morning Snack: Piece of fruit

Lunch: Piece of fruit, Salad (usually just lettuce with a dressing)

Mid-Afternoon: Piece of fruit

Dinner: Several salads and a small serving of meat (sorry, I know

this group is vegan, but I'm not, and I have a ton of meat still in

the freezer).

 

So basically, I am 80%-90% raw, mostly by just eating fruit and

salads. I have tried going to my local gourmet market, but their

fruit has recently been kind of crappy. I decided to go to Price

Chopper (a supermarket in the northeast) and found they have a nice

variety of fruits and veggies, and it was all relatively

inexpensive... and much less expensive than junkfood.

 

Here's some simple options I have been preparing, of which all

ingredients can be baught at the supermarket. The only tools I have

are a knife, a mini food processor, and a mandolin.

 

-Multi-Veggie Cole Slaw: Julienne cabbage, onions, peppers, carrots,

cucumbers, etc... any fresh veggies you like that are on hand. Add

mayo (I haven't tried a homemade recipe, but I will soon), vinegar,

some lemon juice, salt, and pepper. This slaw is yummy, with lots

of texture and is not sweet like most slaws.

 

-Mashed " potatoes " : Puree cauliflower in a food processor. Add

mayo, salt and pepper (I also added some cheese I had left over, but

you could try a raw cheese substitute). It is VERY yummy. A head

is enough for two huge portions, or 3 or 4 smaller servings.

 

-Veggies salad: Add diced onion, diced tomatoes, corn, asparagus,

etc. Add your favorite italian dressing.

 

-Beet Salad: Dice beets and onions. Mix with lemon juice, salt,

pepper, and some fresh herbs such as basil. The flavor is mild and

sweet enough that my little sister asks for it every time she's over!

 

-Tomatoe Salad: Add italian dressing to chopped tomatoes, onions,

and cucmbers. Let marinade for at least 30 minutes.

 

-Salad dressings: Take a tip from Rachel Ray and try making your

own. You need extra virgin olive oil, seasonings or flavorings, and

an acid. Try using cider vinegar, balsamic vinegar, lemon juice,

orange juice, etc. for the acid. Puree fresh or dehydrated herbs,

veggies, or just salt and pepper into the acid and oil. Get

creative, and make a different dressing every day of the week.

 

I figure another week or so and I'll start venturing into the world

of more complex meals. Until then, I'm just experimenting with

veggies.

That was the year that I had discovered the mini trampolene and also we had

about 3 ft of snow and the temp got down to 40 below, freezing all our pipes

except in the well house, so I was hauling water with 2 five gallon buckets for

awhile and when that froze shoveling and melting snow. (do you know it takes 15

buckets of snow melted to wash one load of poopy diapers?)

What you substitute for eggs depends on whether they are being used as a

binder or as a leavening agent. So it will vary from recipe to recipe.

 

There are lots of bread recipes that don't use eggs. Here is a quick

Pam has a point - depends on what you want the 'eggs' to do. For leavening, I

use

an Egg Replacer - it is in powder form and you simply use as directed on the

pack. One

box lasts me forever. My brand is Kingsmill. For binding, I follow the recipe

below as

posted by one of our members, Maida, back in 2005 (It was in the 'Fakes' folder

in the

Recipes file on our homepage.).

 

FLAX 'EGGS "

 

For each " egg "

 

1 Tbs ground flax seeds

3 Tbs water

1 tsp soy lecithin

 

Mix all ingredients in a food processor until frothy and gooey. Chilling the

mixture adds

to the effect.

 

Flax eggs very nicely mimic the binding properties of eggs.

I used box recipes but trying to get back with REAL HOMEMADE FROM the garden

food . So whats the difference ? What does leavening mean ? Sorry almost nearly

raised to luxury fast food s-tryong to get back to my ancesters . LTH

Im trying to not eat meat and stuff related . Hows does one cmpletely avoid it

when u crave it and like milk eggs what do u don what do u eat/drink and still

get the vitiams instead ? LTH

I used the recipe for falafel that's in Vegan With a Vengeance today and

the patties totally disintegrated into the oil. Does anyone know what I

did wrong? The dough is the consistency of thick hummus.

I have made falafels from about three different recipes, with the same problem.

I have also made other types of burger/pate, which disintegrate when I fry them.

I have found the best thing to do is put them on a baking tray, brush with oil,

and cook in the oven.

Most of the time that something like that happens to me

when attempting to fry any kind of breading, it's because

the oil isn't hot enough.

 

The worst thing I've seen, not exactly on-topic here, is

salmon and tuna patties. Unless the oil is quite hot, they

fall completely apart in the oil and all you end up with is

very lumpy and gritty cooking oil.

 

I think that anything mealy will tend to do that. More

moisture to make it less mealy might help.

 

Most people I know use peanut oil for such things so they

can bring it to a higher temperature. I try to avoid

peanut oil because I'm allergic to peanuts even though I

know that highly processed commercial peanut oils are

usually safe for most people with peanut allergies.

 

In comparison, something that isn't mealy doesn't seem to

fall apart much, if at all. For example, one of my

favorites is to cut okra (when I have some fresh okra) into

1/4 inch slices, and mix with a batter made with flour,

water, and baking soda, about the thickness or a bit

thicker than a good pancake batter. Drop the okra and

batter in about 1/4 to 1/3 cup amounts into hot oil and

cook.

They haven't been when I have done them, although I guess you could cook them

longer. At least they are in one piece!
