" But " satan " can also suggest the optional hot peppers in this fajita. Satan (seitan) Fajitas Premarinated seitan, like one of White Wave's options (http://www.whitewave.com/index.php?id=93) An assortment of peppers, hot and nonhot according to your taste (I like habaneros and serranos in mine, but if I'm cooking for others who can't do things as hot as me, I'll do more mild ones, and I'll cook their batch first to avoid getting the juice of my hot peppers in their fajitas), and it's nice to have an assortment of colors Scallions Tomatillos Fresh Cilantro Limes Tortillas or chapatis for wrapping Slice everything to be as long as possible, which in the case of the tomatillos is just wedges. Saute seitan, peppers, scallions, tomatillos and cilantro together. Portion into warmed wraps, but before folding, squeeze in some fresh lime juice. I find that the seitan already has enough salt to make the whole wrap taste very nice, but additional salt and dry seasonings (watch out for seasoning blends, some of them have animal ingredients) are optional.
