Indian style Eggplant dishes

Does anyone have an indian style eggplant dishes recipe they'd be

Hello, and welcome to the list ;=) I don't think we have seen you post here

before. Okay, eggplant, Indian style . . . The best I can offer right now is Sri

Lanka style but I guess you found that in the Files and of course Sri Lanka

isn't India! What part of India did you have in mind? On the map it's all one

country, but really many many 'countries' isn't it? :=)

 

I do have a cookbook that offers me some dozen eggplan recipes - all Indian.

The trouble is I haven't tried any of these in a long long time, and I resist

offering recipes, especially on this list, that I haven't tried and tried again

in my

own kitchen. (Must give some of these a go, I see!)

 

So, I'm sure someone will have a good tried-and-true recipe for you to try.

Meanwhile, if you haven't done so already, please look around the Files for

recipes and check out the Links. We're a young list yet, but there are some

good things there already.

 

Now that we've heard from you, we hope you'll keep posting.
