Recipe: A CLASSIC RAITA

Raitas combine fruits or vegetables with yogurt to provide cooling

accompaniments to spicy dishes. In the vegetarian households that

traditionally serve raita, it has a double function -- it acts as a

refresher and a digestive at the same time. Serves 5.

 

1 medium Tomato, diced

1 small Cucumber, peeled and chopped

1 Scallion, finely chopped

1 Tbs Fresh mint, finely chopped

¼ tsp Toasted cumin seeds

1½ cups plain yogurt

 

 

Combine all ingredients. Chill for at least 30 minutes before serving,

allowing flavors to mingle.
