[recipe] All The Reds Soup (vegan)

This is one of the more spicy soups in my

personal tried and true recipe files. Certainly

some of you here will opt to go for the whole

HAB-anero as opposed to the half i went for

in my interpretation of this dish. i did consult

several chili pepper experts prior to cooking as

i was not familiar with them. In using the half hab

i was quite pleased in that the soup had a good

amount of heat but didn't over-power the delicate

flavors of the rest of the ingredients. :)

 

All The Reds Soup (vegan)

 

1 red bell pepper, seeded and chopped

1/2 small habanero chili, seeded and finely minced

1 large red onion, chopped

3 garlic cloves, minced

2 Tbs olive oil

1 can (14 oz)can diced tomatoes w/ jalapeno peppers

4 cups stock

2 Tbs rice (your choice as any type works well in this;

used basmati)

2 Tbs Worcestershire sauce

1 cups prepared red kidney beans

1 tsp dried oregano

1 tsp sugar (used sucinot)

Salt and freshly ground pepper; fresh parsley, chopped

for garnish.

 

1. Put the red pepper, onion, garlic and oil into a large

saucepan. Heat until sizzling, then turn down heat to

low. Cover and cook gently for 5 minutes.

 

2. Add the rest of the ingredients, except the garnishes,

and bring to a boil. Stir well, then simmer, covered,

for 15 minutes. Check the seasonings, garnish and serve hot.

 

serves 4 to 6

 

*** Used Kroger brand Worcestershire sauce which

is vegetarian, but read those labels as many brands

contain anchovies!

thanks so much for this recipe, PT ;=) what a kindness to share it. Yup - spicy

really does work, doesn't it (though of course not for everyone ;=)) I'll copy

it

and paste it up (why do I always think of it as 'up'??? *lol*) in the Files

right

now! I'm a bit behind in all that :=(

I'm another soup fanatic *lol* I swear I could eat it three times a day - summer
