Indonesian Rice Salad

any substitute for the Thai peppers?i am unsure about their availability in

this tiny burg :) Recipe sounds delicious

Indonesian Rice Salad

 

Ingredients:

1 cup uncooked long-grain white rice

1 cup of pineapple chunks

Red & green bell pepper, chopped

Thai peppers, chopped

1/2 cup cashews, chopped

2 gr. onions, ends removed, thinly sliced

1 rib of celery, sliced

1/2 cup raisins ( opt.)

 

 

Dressing:

3/4-cup orange juice

1/4-cup vegetable oil

2 T. of soy sauce

1 t. sesame oil

1 T. ginger, minced

2 T. garlic, minced

2 t. orange zest

 

 

Instructions:

Cook rice. Let cool; add the remaining ingredients. Drizzle on

dressing; toss and serve.

If I wasn't a low-carb fanatic this Indonesian rice salad sounds delicious!

I'm sure Jim will have some some suggestions, but I'd use whatever hot

peppers/chilies you can find, being careful of the relative hotness of what you

buy compared to the Thai chilies. You'll have to experiment a bit - not a bad

idea in a salad like this anyway - until it tastes just right to you! Good luck

with

it! We're going to try this one soon ;=)
