Chickpea Indian Style

Here's a recipe that I simply love- it's from a book called 1001

Indian Recipes Recipes and is great served with steamed basmanti rice:

 

4 tbs oil, 3 onion, chopped 1 tsp ground turmeric

4 cloves garlic, crushed 2 green chillies, chopped 1 tsp paprika

1 tbs ground cumin 1tbs ground coriander 1 tsp garam Masala*

5 tomatoes, skinned, and chopped 1 tbs chopped mint

1 tbs chopped fresh coriander 1 can chick peas, drained

salt and pepper to taste

 

Heat the oil and fry the garlic, onions and chillies until lightly

browned. Add the turmeric, paprika, cumin, coriander and garam Masala

and fry gently for 5 minutes, stirring. Add the tomatoes, mint and

coriander and cook for 10 minutes, stirring. Add the chick peas and

simmer for 5-10 minutes until the chick peas are coated with the

sauce. Season with salt and pepper, if desired before serving.

*Garam masala is sort of the five spice blend of Indian cooking and

is made by blending the following in a coffee grinder until it is a

fine powder (I use an old fashioned mortar and pestle since I just

don't have the space in my tiny kitchen for technology) : 1/4 cup

black cardamom seeds; 1/4 cup cloves; 1 oz cinnamon stick; 1/4 cup

black peppercorns. Alternatively, it can be omitted from the recipe

if it proves too time consuming.

 

It really is easy to make and the fragrance from the combination of

the spices when frying is incredible!
