It's the same plant that all other tea is from (Camellia Sinensis), but only the top few leaves are used in white tea. I can't recall the exact processing of these most tender leaves, but the result is a mellow amber brew with a light, delicate taste. It's much higher in antioxidants than green tea and personally I think it tastes better. I also make a White Tea soap--I make a strong brew, then I freeze it and use it as the water portion of my formula, sprinkling the lye in and stir stir stir. This keeps the lye temperature down and hopefully preserves some of the beneficial attributes of the tea. Origins has some products containing White Tea in their line.
