Spelt is a grain that is older than wheat and much easier to digest. It is light and airy. I have made bread with it, using the same measurements. I have been wanting to try it for pizza, just have not done it as yet. Please let me know how it turns out. I just remembered, there is another grain called KAMUT I think that is the way to spell it. People say that it is a good wheat substitute. I was given some a little while ago, I need to run it through the mill. It's possible that someone with a wheat allergy may be able to tolerate spelt. But spelt is not recommended for someone with Celiac Disease. I can't argue with this or defend it. I just know that's what the recommendation is.For my daughter with Celiac Disease, the risk is just too great. My 3 year old daughter is on a gluten-free and dairy/casein-free diet (she reacts to both, although an " allergic " reaction is not detected via bloodwork). The best pizza dough recipe I've tried so far is in one of Bette Hagman's cookbooks. She has a French Bread/Pizza Mix flour blend that is better than anything else I've tried so far.
