Carrots have Phytochemicals, nutrients and Flavonoids benefit our bodies by: Boosting immunity (especially among older people). Any root vegetable pulls toxins from the soil - this is particularly true of parsnips. Eat them organically so you are not ingesting a large number of toxic ingredients. Most of us don't chew enough. I sure can't see myself sitting there till the bite is total liquid. The point is to make the heart of the carrot cells available to the body. Adelle Davis recommended cooking carrots for that reason. The French sometimes serve carrots grated on a really fine setting, that might do the same thing.
