If you remember, I was exploring the ongoing debate -- are they good for us or are they bad for us? And what I came up with, after discussing the matter with Dr. Wright, is that eggs are the best source of low-cost protein available, and they're also an excellent source of something called phospholipids. Phospholipids are fats combined with phosphorous. They act as critical building blocks of the membranes surrounding each and every cell in your body. Phospholipids are especially abundant in your brain and in the myelin sheaths of nerves.While phospholipids are normally synthesized in the body, with time and age this process slows down (as do most others), and by middle-age, you may no longer process a sufficient amount. Luckily you can supplement a diminishing supply of phospholipids by eating foods that contain them. But keep in mind there are only a few dietary sources of phospholipids generally available to us -- one being eggs. The chances are excellent that a small but steady intake of food sources of phospholipids over an entire lifespan will provide enough to keep your nerve-cell membranes (as well as all other cell membranes) more "youthfully fluid" and better able to perform their functions.
