Homemade Dairy Free Ice Cream

I was looking for recipes today and came across this one - looks easy. You could use fruit etc to make different flavors. Also, this same recipe can be used for vegan whipped cream.

Dairy Free Vanilla Ice Cream 5mins plus freezing

 

Serves 4

 

Ingredients:

 

225g/8oz firm Silken Tofu

 

75g/3oz Demarera Sugar

 

2 tbsp Soy Milk

 

1-2 tbsp Vanilla Extract (check ingredients label)

 

Instructions:

 

1. Place all the ingredients in a blender or food processor and process until very smooth.

 

2. Place in a rigid freezer proof container and freeze until firm.

this recipe out. I did not have any vanilla - I don't use it so I put cinnamon, nutmeg, ginger and clove powder in the mixture and some coconut powder. Also, it is lumpy 'cause I can't find the attachment for my blender - haven't used it for years. We'll see what happens. /images/graemlins/crazy.gif

Gotta use a blender - the texture was kinda cottage cheesy-like but the flavor was good!

 

Also, next time I will use half the amount of sugar they call for - way too sweet for me - I don't handle much sugar or I bounce off the walls for hours.

 

I am going to try rose essence and cardamon to give it an Indian sweet type flavor next time I try this - maybe next week after I get groceries.
