Raspberry Muffins Question about ingredients

I WILL me making these - love raspberries! One question - the directions say to

blend egg, milk, and butter, but I don't see butter listed in the ingredients.

Probably I should read further in my emails from last night and I'll find the

answer. ;-)

Raspberry Muffins


2 1/4 cups whole wheat flour

2 tsps. baking powder


1 tbsp. sugar

1 egg, beaten

1 1/4 cups cold skim milk

1/4 cup olive oil

1 cup fresh raspberries


Preheat oven to 375 degrees. Mix dry ingredients together in medium size bowl.

In a small bowl blend egg, milk, and butter. Add to the dry ingredients and mix

just until lumpy. Add raspberries, stirring gently. Do not overmix. Spoon into

greased muffin tins. Bake for 25 to 30 minutes.

Makes 1 dozen.
