Guest guest Report post Posted December 6, 2009 Raspberry Muffins 2 1/4 cups whole wheat flour 2 tsps. baking powder salt 1 tbsp. sugar 1 egg, beaten 1 1/4 cups cold skim milk 1/4 cup olive oil 1 cup fresh raspberries Preheat oven to 375 degrees. Mix dry ingredients together in medium size bowl. In a small bowl blend egg, milk, and butter. Add to the dry ingredients and mix just until lumpy. Add raspberries, stirring gently. Do not overmix.
