Using spices

For me there is a continuum in their use, but I use some spices less than 1%

even. For some reason, I feel I need a 'complete' spice cabinet, so I have

caraway but i have not used it in 3 years. We also figured we were never going

to use Anis seed or fennel, so we might have failed to replace after they were

old and made it to the compost....I do not mind them in the breath fresheners

you get in Indian restaurants though, or in tea. Allspice is another one that

is rarely used in my house, but it is in some spice mixes we like (old bay I

think), so we like them in some things. I feel that keeping a more complete

spice collection will encourage me to try new recipes with new flavors. I get

them very cheap (unless you are talking saffron) so it is OK. Often times, I

sprout the whole spices and use in the garden (coriander, mustard, fenugreek for

example). Also, I notice a strong seasonal variation, I use lots more ginger,

cinnamon, and cloves in the winter, they are warming spices.

That's my feeling too. Just doesn't seem to work that way....

We made veggie chili last night for dinner. We used a packaged seasoning mix,

although I had all the ingredients right here at home to season it. But we've

always liked the seasoning mix, so we just bought that. However, last week, I

bought a bottle of smoked paprika - would that have gone well with the chili? I

didn't want to add it in case it ruined the chili, but thought you all would be

the ones to ask about that. I see them use it on the Food Network all the time,

but it is a new spice for me. I've used paprika, but not the smoked kind.
