Persimmon Cake

 

1 cup sugar

1 teaspoon allspice

8 tablespoons margarine

1 cup raisins

3 cups flour

1 cup dates, chopped

1 teaspoon cinnamon

2 eggs

2 cups persimmon pulp

2 cups nuts

1 teaspoon nutmeg

1 teaspoon baking powder

 

Cream margarine and sugar; add eggs. Mix all dry ingredients.

Add persimmon pulp to egg and sugar mix. Gradually add flour mixture.

Add raisins, chopped dates and nuts.

Bake at 325 degrees for 1 1 1/2 hours. Test with toothpick so you don't

overcook.

Makes a very moist cake. Serves 8.
