Hi,

 

What cornbread recipe are you referring to? I did a search in the messages for

" cornbread " and also for " corn bread " but could not find a recent recipe.

Hi Martha!

I posted a cornbread recipe several days ago - maybe a week or so ago, that I

believe they are talking about. I'll post it again. It is my standard cornbread

recipe, and everyone that eats it tells me it is the best cornbread that they

have ever had! We love it! This is my secret recipe, so keep it under your

hat!

 

Annie's Cornbread

 

1 cup yellow cornmeal

3/4 cup plain unbleached white flour

1 tablespoon baking powder

1/3 cup sugar

1 egg

1 cup of milk

1/4 cup of canola oil

 

Preheat oven to 400 degrees. Grease an 8x8 square pan or pie pan.

In a bowl, mix the cornmeal, flour, baking powder and sugar - I use a whisk.

Then add the egg, milk, and oil and mix real well, until all is combined. Pour

into prepared pan, and bake for 30 minutes. A toothpick inserted into the center

should come out clean. The top should be a light brown. We like to serve this

in squares cut in half with a little butter on each half and a little sprinkling

of sugar on them. Serve hot.

To make this vegan, use soymilk instead of cow's milk, and EnerG egg replacer

for the egg.

This is especially delicious served with lentil soup, or beans cooked all day in

the crockpot. I also serve it with my Black Beans on Rice. I'm a Southerner

(Virginia), and we like it the next day, crumbled into a glass, and milk poured

over it, and eating it with a spoon. MMMMmmmmmmmm.........
