Guest guest Posted October 30, 2009 Report Share Posted October 30, 2009 Vegetable stock is basically the water (stock) that's left over when you cook vegetables. You could use basically any root vegetable and greens to make it. You could boil some cabbage, carrots, celery and onion with some salt, pepper and other seasonings and just save the water after you're done cooking your veggies. I'm sure someone else has some other ideas.
