That's wonderfdul how much the vegan diet improved your Dad's health. It did

the same thing for my nephew. He was living on burgers and pounds of cheese on

his pizza and nachos.

He was very upset when he found out how high his cholesteral was and said as

long as his veg food tasted good he would make the change.

When he was served veg burgers with all the trimmings, TVP in his spaghetti,

Morningstar riblets, bean and rice enchiladas, veggie chili, he was on cloud 9.

At age 17 his cholesterol was 259 and is now very low something around 159.

I have never liked meat much and have actually tried out vegetarianism,

veganism, and an 85% raw diet before. I have pretty much stayed away from

" fake " meats and cheeses. I actually haven't tried any of the cheese. I'm

more of a " eat it as close to how nature made it " kind of a gal, so reading

the labels of vegan cheeses sends me into fits of anxiety. I have tried

Field Roast sausage and LOVED it! I will add it as a special treat to my

diet, but not as a regular thing. I'm fine with veggies and grains. (And I

eat very FEW salads, BTW. I prefer eating them when someone else makes

them!)

That's great that your nephew saw such an improvement in his diet. Good for

him!

My dad is my hero. :^) I love him to pieces.

I don't use vegan cheese often at all, not too many alternative products either

but it is nice to have a box of veg burgers in the freezer for a day I'm rushed,

I love the canned Worthington ground round too.

It's wonderful we have all these products though. It makes it so much easier

to become a vegetarian. When my nephew first became vegetarian he depended on

them daily and as he became vegan he would slowly use them less.

I love my grains, veggies, beans and I emjoy making thick stews.

Not saying fake meats are bad or anything

:^D I do eat tofu, but perhaps once every other week or so. I've never

tried tempeh or seitan. I think what turned me off was some terrible TVP

chicken from the 1990's during my first foray into the world of veganism.

:^)

Someone recommend Field Roast brand to me, though, and I saw some at Whole

Foods. I picked up the sage and apple sausage and used it in some cranberry

beans for my ham-and-sausage-loving-family. My husband (the pickiest one)

absolutely loved the sausage - so did I. I figured if it got rave reviews

from a carnivore, it must be good! I picked up the Italian sausage variety

and am going to cook it tomorrow with roasted veggies.

I knew what you meant. I personally don't care for seitan, it tastes a little

too much like the right thing in texture. I don't like my tofu frozen and thawed

either, reminds me of a sponge lol

I spent years avoiding lentils because my Mom didn't put anything in them when

she cooked them and sometimes she made a loaf out of them and it was like eating

wet cardboard. I got the nerve one day to toss all types of things in the

lentil pot and I have loved them since that day.

We all have different tastes so it's wonderful we have groups with recipes to

share, wonderful veg cookbooks and ingredients to use.

I mentioned the Field Roast, let me know how you like the Italian sausage. It's

wonderful tossed with sauteed onions, mushrooms, bell peppers and spaghetti

sauce. I like it in a sandwich.
