Spinach and mustard noodles

Hi all,

 

I made up this recipe last night and while it's really basic, it tasted nice and was super quick to make so I thought I'd share.

 

Boil one portion of egg free noodles for however long it says on the packet. Just before you drain them, add one cup of raw spinach leaves and stir them in so they wilt.

Drain the noodles and spinach and put them back into the pan.

In a cup or bowl, mix: one teaspoon of dijon mustard, one teaspoon of wholegrain mustard, one tablespoon of soy sauce and a little under half a teaspoon of vegan bouillon powder. You might want to play with the quantities of the soy sauce or powder if

either of yours contain salt… I had low salt soy sauce but if it was the regular kind I would have probably left the bouillon out of there. Also if you aren't such a mustard addict as I am, reduce quantities of one or both types of mustard.

Dump that sauce on top of the noodles and mix together, then serve. I had mine with a huge salad of raw baby spinach leaves, celery, cucumber, cherry tomatoes and red peppers.

 

Took about 10 minutes max to prepare, tasted yummy and filled me up all evening! And my omni DH kept stealing noodles off my plate when he thought I wasn't looking.

Soubnds good - you could also use low salt cubes.
