expired soy yogurt

OK, I know what I have to do, but I was wondering if anyone knows of

any *research* or *facts* (as opposed to opinions, marketing info,

rumor, etc.) about how long soy yogurt is safe to eat or cook with,

for future reference. I cleaned out my refrigerator last week, but

today I discovered another quart of soy yogurt with a February date!

(It's an under-the-counter fridge that's very deep, and it was

lurking in a back corner.) It doesn't smell or look " off " and, if I

hadn't looked for the date, I probably would've eaten it without a

second thought.

 

The only info I've found so far is that soy yogurt should be opened

by the use-by or expiration date (or up to a week after), then used

within a week after it's opened. (Some other googloids appeared to

reference actual research, but the pages were too big to open --

anything over 100k makes my browser freeze or crash.)

I've not heard of anything. I do know that if tofu goes off it smells vinegary. I would think if it smells okay, and has no mould on it, then take a taste and see if it is okay.

Hmm, I did taste a little bit and it seemed ok, maybe a little

bit sharper, but since it's 6 weeks beyond the expiration date, I'm

not sure I'm willing to take a chance.

If it tasted sharp I wouldn't eat any more.
