Guest guest Posted September 22, 2006 Report Share Posted September 22, 2006 Coffee Coconut Cookies 1 cup all purpose flour 1/3 cup brown sugar 1/3 cup oil 1/3 cup flaked coconut 3 tbsps. instant coffee dissolved in 1 tbsp. warm water pinch salt 1 tbsp. vanilla Mix oil and sugar together. Sift in flour, salt. Add vanilla and coffee. Mix well. Form cookie, then roll them in the coconut until well covered. Preheat oven at 350 degrees, bake 10 minutes.
