Coffee Coconut Cookies

Coffee Coconut Cookies

 

1 cup all purpose flour

1/3 cup brown sugar

1/3 cup oil

1/3 cup flaked coconut

3 tbsps. instant coffee dissolved in 1 tbsp. warm water pinch salt

1 tbsp. vanilla

 

Mix oil and sugar together. Sift in flour, salt. Add vanilla and coffee. Mix

well. Form cookie, then roll them in the coconut until well covered.

Preheat oven at 350 degrees, bake 10 minutes.

Don't overbake, coconut get ugly with several more minutes.

I'm sure it would be fine, just a more dense, chewy cookie. I love to use WWF.
